Serving suggestions Like most white wines, Céleste is best served chilled, but not too cold to mask its aromas. A serving temperature of 8 to 10°C is ideal. History of grape varieties Pinot Gris is a white grape variety that is actually a mutation of Pinot Noir. It originates from Burgundy, France, but is now grown in many wine regions around the world. It produces wines that can range from sweet to dry, and which are often rich in fruit aromas such as pears, apples, and peaches. Chasselas is the most cultivated white grape variety in Switzerland. It is particularly appreciated for its ability to express the terroir on which it is grown. Chasselas wines are generally dry, light and delicate, with subtle aromas of fruit and flowers. Why this fancy name? In Greek mythology, the term ‘celestial‘ generally refers to everything in the realm of the gods, the sky and the universe beyond the earth. Celestial beings are often associated with divinity, immortality, and power. An interesting parallel can be made with Astraea, the goddess of justice, innocence, and purity. Astraea was known to be the last of the immortals to live among humans during the Golden Age of man. When humanity became corrupt, she withdrew to the sky and became the Virgo constellation. By naming our wine “Céleste”, we evoke a divine, pure, and precious quality. This can be interpreted as a reference to the purity of the ingredients we use, the integrity of our organic winemaking process, or the transcendent experience of tasting a high-quality wine. Moreover, the blend of Pinot Gris and Chasselas could be seen as a harmonious union of two distinct elements to create something new and beautiful, just like stars form constellations in the sky.

Assemblage Céleste 2022 :
40 % chasselas barrique et 60 % pinot gris :
Robe jaune légèrement orangée.
Ce vin est encore en cuve. Son nez est intense et s’exprime sur des notes de fleurs blanches, de poire, de litchi et de citron.
La bouche est franche, tonique, vive et fine. Elle offre équilibre et finesse, longueur. C’est un vin sapide qui est persistant, citronné en finale, mais aussi minéral (note saline marquée). Il y a en bouche juste ce qu’il faut de gras pour équilibrer la matière.
J’apprécie cette tension et cette minéralité, qui prennent en bouche le pas sur le fruité. Ce vin s’associera avec des fruits de mer et des poissons du lac.

Céleste 2022 :
Le premier à avoir été goûté. Il a immédiatement séduit tout le monde par son équilibre entre les différents composants, minéral et fruité, acidité et gras se contre-balancent. Il est sec, mais pas trop. Beau succès.

Céleste 2022 :
Assemblage de pinot gris pour 60%, de chasselas élevé en barrique pour 40 %.
Robe jaune légèrement orangée.
Nez fruité, de façon immédiate, fruits exotiques, mangue surtout mais aussi fruit de la passion, citron. Caractère épicé qui évoque les épices de Noël, la cardamome.
La bouche est agréablement souple, fraîche, équilibrée, longue.
Le gras du pinot gris est pondéré. Le caractère épicé est présent en bouche. La matière se montre structurée, légèrement tannique. Très jolie longueur pour ce vin qui se plaira à table par sa complexité aromatique et ses épices, mais qui plaira à d’autre par sa structure et son aromatique à part pour un apéro. Va gagner en finesse avec un peu de garde. 12° d’alcool qui rendent le vin digeste et sapide. Voila un très bel assemblage, goûteux à souhait, et un vrai vin de gastronomie avant tout.
